T's quick fix special chix recipe

Dinner last sunday was a simple affair. As T had to work both days over the weekend, I had no one to accompany to the market. Plus weather was so cold and I was huddled under my blanket, reading online novel and sleeping. Zero productivity.

Sunday is always a day where we prefer to cook at home. No reason why, maybe because we have all the time to do marketing and than planning for menu for the night.

And I digress.

Ok, back to T's secret recipe in marinating chicken wings for 15 mins before baking.

Below is a blow by blow account how T did our yummy chickens!!

First wash the chicken mid-joint

Then dry them with kitchen towel. (T insisted I take pic and took down this step as he said not many will know)

Next, cut a slit at the back of the mid-joint for it to absorb the marinate

Pour in oyster sauce, pepper, sesame oil, a teaspoon of sugar, chicken essence powder and light soya sauce for marinating (Can add a dash of Shao Xin wine or whisky if you want)

Mix the marinate together with the chicken mid joints. Ready for baking

While baking at 200 degrees, turn over every 6 mins until brown.

Voila!! My favourite yummy chicken in just 30 mins (including preparation and marinating time)

PS - Thanks Chev for pointing out its mid joints not thigh!! Grrhh.. what was i thinking?
Edited to add - T said before putting in to bake, pour the remainder of the marinate onto the chicken. Bake the back facing up first for about 10 mins than turn and bake the next for 6 mins until brown. Also put the chicken close to the grill.
